Below are the ingredients and the instructions on how to make Soufflé Cake Roll.

The Ingredients:-

  • 300 g milk
  • 1 g salt
  • 60 g cake flour
  • 50 g unsalted butter
  • 4 egg white
  • 20 g fine white sugar
  • 5 egg yolk
  • 70 g white sugar

The Instructions:-

  1. Weigh all the ingredients. Line a Swiss roll cake pan with parchment paper (I am using 28*28cm) Prepare a ice water bath
  2. Beat 5 egg yolks with 20g sugar until pale and fluffy(sugar is a must in this step to prevent gluten formation) Sift in 60g flour and gently stir to combine
  3. Add 50g butter and 1g salt to 300g milk, boil over medium heat until bubbles appearing on the walls of milk pot Add the boiled milk to egg yolk-flour mixture drop by drop with constant stirring, until the mixture is flow-able, pour in all milk at one go Keep stirring the mixture to achieve a consistency as shown above (the mixture drip disappears within1-2 seconds) IMMEDIATELY cool the mixture down to room temperature by sitting it over ice water bath, with constant stirring
  4. Beat the egg white using MEDIUM speed to achieve SOFT peaks with fine and even-sized air bubbles
  5. Fold in 1/3 of the egg white into the cooled mixture, gently but very quickly Immediately, pour the whole mixture back to the remaining 2/3 egg white and fold them together Transfer to the cake pan
  6. Bake at preheated oven at 170 degree Celsius for 25-35 mins depending on your oven
  7. Cool the cake completely for about 45 mins To make an O-shaped roll, place the fruit in the center and bring the two sides together
  8. Refrigerating the cake roll for at least half an hour to firm up the cream before enjoying
