  • 1 bay leaf
  • 1/2 teaspoon freshly ground black pepper
  • 1 clove garlic, finely minced
  • 1/2 cup sour cream or lowfat yogurt
  • 1 can 16 oz. no salt or sugar added canned shoestring 3 cups water
  • 1/2 cup chopped onions
  • 2 tablespoons red wine vinegar
  • 1/2 teaspoon thyme
  • 1 tablespoon unsalted butter

The Instructions:-

  1. Melt butter in saucepan; add onions and garlic. Saute until tender, about 6 minutes.
  2. Add bay leaf, thyme, pepper, vinegar, beets with their liquid and water. Bring to boil; reduce heat and simmer 45 minutes.
  3. Stir in sour cream.
  4. Serve hot or chilled.
