Below are the ingredients and the instructions on how to make Alaska Cod Soup.
- 3 Alaska cod fillets
- 1 lime, juiced
- 1 tablespoon olive oil
- ½ cup Vidalia onion, small diced
- ½ cup Cubanela peppers (or green bell peppers), small diced
- 3 garlic cloves, minced
- ½ cup celery, small diced
- 1 can (14.5 oz) tomatoes, petite diced
- 4 cups water
- 1 teaspoon salt
- ½ teaspoon oregano, ground
- 2 cups white potato, small diced
- ¼ cup pimiento stuffed Manzanilla Olives, sliced
- 1 ½ tablespoons cilantro, finely chopped
- Additional salt and pepper to taste
- Cut the Alaska cod into 1-inch cubes and place it in a bowl. Season it with salt and pepper to taste and pour the lime juice over it. Set aside.
- In a large pot over medium high heat, add the olive oil, onion, peppers and garlic tossing it until onions are translucent.
- Add the celery and cook one more minute.
- Pour the canned tomatoes and toss to incorporate all the flavors.
- Add the water, stir it and season it with salt and oregano. Adjust salt to taste.
- Bring mixture to a boil and add the potatoes. Let them cook for 15 minutes.
- Once the potatoes are tender and almost done, add the Alaska cod, olives and cilantro.
- Cook for another 5 to 10 minutes and adjust salt and pepper to taste.
