Below are the ingredients and the instructions on how to make Alaska Cod Soup.

The Ingredients:-

  • 3 Alaska cod fillets
  • 1 lime, juiced
  • 1 tablespoon olive oil
  • ½ cup Vidalia onion, small diced
  • ½ cup Cubanela peppers (or green bell peppers), small diced
  • 3 garlic cloves, minced
  • ½ cup celery, small diced
  • 1 can (14.5 oz) tomatoes, petite diced
  • 4 cups water
  • 1 teaspoon salt
  • ½ teaspoon oregano, ground
  • 2 cups white potato, small diced
  • ¼ cup pimiento stuffed Manzanilla Olives, sliced
  • 1 ½ tablespoons cilantro, finely chopped
  • Additional salt and pepper to taste

The Instructions:-

  1. Cut the Alaska cod into 1-inch cubes and place it in a bowl. Season it with salt and pepper to taste and pour the lime juice over it. Set aside.
  2. In a large pot over medium high heat, add the olive oil, onion, peppers and garlic tossing it until onions are translucent.
  3. Add the celery and cook one more minute.
  4. Pour the canned tomatoes and toss to incorporate all the flavors.
  5. Add the water, stir it and season it with salt and oregano. Adjust salt to taste.
  6. Bring mixture to a boil and add the potatoes. Let them cook for 15 minutes.
  7. Once the potatoes are tender and almost done, add the Alaska cod, olives and cilantro.
  8. Cook for another 5 to 10 minutes and adjust salt and pepper to taste.
  9. Enjoy!
