How To Make Bennigan’s Style Potato Soup | Recipe

Below are the ingredients and the instructions on how to make Bennigan’s Style Potato Soup.

The Ingredients:-

  • 1 ounce ham base
  • 2 quarts chicken stock
  • 8 oz yellow onion, diced
  • 3 ounces margarine, I prefer to use butter
  • 2 pounds potatoes, cut to bite size
  • 1 teaspoon black pepper
  • 2 cups milk
  • 3 ounces flour
  • 3 ounces margarine, butter

The Instructions:-

  1. Combine chicken stock in sauce pan with ham base.
  2. Stir until lumps are gone.
  3. In separate stock pot: melt first margarine butter measurement; add onion and saut until transparent.
  4. Add potato bite size pieces and pepper.
  5. Add chicken stock mix and stir until well mixed.
  6. Bring mixture to a boil.
  7. In small pan, melt second margarine butter measure and add flour to create a roux.
  8. It should be light brown in color.
  9. When stock comes to a boil, add roux with a wire whisk.
  10. This will cause the soup to start thickening.
  11. Return to a boil.
  12. Slowly add the milk.
  13. If the soup is too thin, make additional roux and add it to the soup.
  14. If you need to do this, be sure to cook the roux until a tan color.
  15. This will get rid of the raw flour taste.
  16. If the soup is too thick, thin it out with more milk.
  17. Garnish with cheddar cheese, bacon, and green onions.
